Very close to cajun, needs a little more work on spicing and texture. Also order dry cured bacon in this order which was very poor. Shrinkage in cooking nearly 50% and that's not dry cure. sliced too thin and unevenly. wet. I usually cure my own and after proper dry curing shrinkage is 10% max.
Ideal for Cajun Jambalaya. Really adds a smokiness with a pleasant blend of spice.
First and definitely not last order . The smoked black pudding is World class ⭐️⭐️⭐️⭐️⭐️
This is the cajun (spicy) andouille, not the milder French version. If you like cajun or creole food from Louisiana, it’s just the ticket: can highly recommend it in jambalaya.
