- 2 kg Hugh Maguires Sirloin Roast
- Kylemore Acres Roast Beef Seasoning
- 2 tbsp olive oil
- 2 garlic cloves, crushed
- Carrot, chopped
- Leek, chopped
- Onion, chopped
- Mix the roast beef seasoning blend with the garlic and olive oil and rub onto the roast, covering completely.
- Fill a roasting dish with the chopped veg and a small bit of water and place the roast fat side up onto it. Cover and roast in preheated oven at 160C for approx. 1 hour and 40 mins.
- Remove from dish, place on a tray and return to the oven for a few minutes to brown.
- Meanwhile transfer the juices from the roasting dish to a saucepan to make a sauce, adding some red wine, red currant jelly and thicken with 1 tbsp of corn flour mixed with 1 tbsp of water.
- Serve with potatoes and vegetables of your choice.
