Ingredients
- 1 kg Hugh Maguire Butchers Diced Lamb
- Kylemore Acres Lamb Stew Mix
- 1 tbsp olive oil
- 2 medium onions, chopped
- 2 garlic cloves, crushed
- 800 ml water
- 2 tbsp lemon juice
- 1 kg rooster potatoes, peeled and cubed
- 420 g canned marrowfat peas, drained
Method
- In a large pot, heat the olive oil and brown the diced lamb.
- Add the chooped onion, garlic, water, lemon juice and the Irish Stew Mix to the pot.
- Bring to a boil, then partly cover and simmer over low heat for 45 minutes.
- Then, add the diced potatoes and simmer for 25 minutes.
- During the last 2 minutes of cooking, add the drained peas. Remove from the heat and serve.
