Spiced Beef Roast with Caesar Potato Salad
- 2kg-3kg Hugh Maguire's Spiced Beef
- 2 tbsp olive oil
- 1 tbsp juniper berries
- 1 tbsp allspice berries
- 1 tbsp coriander seeds
- 1 tbsp black peppercorns
- Grind all the spices and ½ tbsp salt in a pestle and mortar.
- Apply oil and then rub the ground spices evenly all over the beef.
- Cover it and keep it in the refrigerator overnight.
- Preheat the oven to 190C/170C fan/gas 5.
- Roast the marinated beef in a preheated oven for 15 to 20 minutes or until golden brown.
- 6 potatoes diced
- 1/4 cup carrot grated
- 2 spring onions finely sliced
- 2 eggs hard-boiled roughly chopped
- 2 bacon rashers diced
- 1/3 cup Caesar salad dressing (any brand)

- 3 to 8 pound Hugh Maguire's Smoked Turkey Breast
- 2 tsp dried oregano
- 2 tsp dried rosemary minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp black pepper
- 1 tsp onion powder
- 2 tsp paprika
- 1 tsp garlic powder
- 2 tsp salt
- Beat olive oil, paprika, oregano, rosemary, salt, thyme, black pepper, onion powder, and garlic powder to make a smooth paste.
- Place turkey breast on the rack of a 9x13 roasting pan.
- Rub the spice mixture on the turkey breast and make sure the whole bird is covered with spice.
- Preheat the oven to 375°C.
- Roast each pound separately in a preheated oven for 20 minutes and remove from the oven when it reaches an internal temperature of 160°C.
- Cover the roasted breast in aluminum foil loosely for 15 minutes.

- Rip the top portion of the leg of lamb every 3 to 4 inches and push the slices of garlic inside the meat.
- Rub salt and pepper to cover every inch of the meat and sprinkle rosemary on the leg.
- Preheat the oven to 350°C.
- Place lamb on a roasting pan and roast in a preheated oven for 1 to 2 hours.
- Remove the roasted leg and cook the peeled potatoes in the pan.
- Serve a roasted leg of lamb with yummy, cooked potatoes.
