Hugh Maguires Shepherds Pie

Ingredients 

  • Kylemore Acres Shepherds Pie Mix – Gluten Free
  • 2 tablespoons of olive oil
  • 500g Hugh Maguire Butchers Minced Beef or Lamb
  • 1 onion, chopped
  • 1 celery stick, diced
  • 1 big tomato, diced
  • 2 big carrots, diced 
  • 100g frozen peas
  • 1 heaped teaspoon of flour
  • 400ml water
  • 1 tablespoon tomato puree
  • 1.5kg potatoes 

 

Method:

  1. Peel the potatoes, cut into chunks and boil in salty water until cooked. 
  2. Chop the veg.
  3. Heat the oil in a pan and fry the onion until golden.
  4. Add Hugh Maguire Butchers beef or lamb mince and fry until browned. 
  5. Add the flour and the Shepherds Pie Mix, fry for a minute.
  6. Add the tomato, water, celery, carrots and tomato puree. 
  7. Turn down the heat and let simmer for 10 minutes. 
  8. Turn off the heat, add the peas and transfer to a casserole dish. 
  9. Mash the potatoes with butter, a bit of milk, salt, pepper and nutmeg to your liking and top and seal the mince mixture with the potato mash.
  10. Cook in preheated oven at 180C until golden, approx. 30 mins.
