Serves: 4

Cook time: 45mins

  • 2  carrots
  • 500g minced beef
  • 3 sprigs of thyme
  • 500ml beef stock
  • 1 tbsp tomato purée
  • 2 tbsp Worcestershire sauce
  • 35g frozen peas
  • 450g potatoes
  • Premium Irish butter
  • 100ml full fat milk
  • 1 egg yolk

  • Chop the carrots and fry in Irish Rapeseed oil until it has softened. Add the thyme and minced beef. Cook the meat through.
  •  Add the beef stock, the tomato purée and Worcestershire sauce. Simmer for 20 – 25 minutes until the liquid has reduced. Add the peas and transfer the ingredients to an oven-proof dish.
  • Preheat the oven to 180ºC/350ºF/gas mark 4.
  • While the oven is heating up to the preferred temperature, prepare the potatoes into small sizes and cook in boiling water, add salt. Once cooked through, drain the water. Add butter and milk and mash until the potatoes are smooth. Then add the egg yolk and whisk through the potato using a fork or a whisk. Pop into the oven for 20 minutes, until the potato is crisp golden brown on top.
