Creamy coconut and Tomato Chicken Recipe

Delighted to share with you another family favourite! Most ingredients are already in your pantry! And for extra time saving, I get the chicken already cut in strips from Hugh Maguire Butchers. It helps to bring out a family dinner in a short amount of time, especially on weekdays. Really quick, fragrant and good value! My boys love it (children and husband alike). I hope you give it a try.


Creamy Coconut and Tomato Chicken

Serves 5

6 chicken breasts, cut in strips

2 medium size onions, chopped

1 can of quality coconut milk

1 can of chopped tomatoes

1 tsp sugar

1 tsp colombo powder (or other mild curry)

1 tbsp olive oil

Salt & pepper

Rice to serve


  1. Start by heating up the oil in a large pan. Add in the onions and cook for a couple of minutes without letting them colour.
  2. Toss in the chicken strips and the colombo spices. Season with salt and pepper.
  3. Add the chopped tomatoes then coconut milk. Add the sugar.
  4. Cover and simmer on a medium heat until the chicken is cooked through and the sauce is starting to get creamy. Serve with steamed basmati.
