Delighted to share with you another family favourite! Most ingredients are already in your pantry! And for extra time saving, I get the chicken already cut in strips from Hugh Maguire Butchers. It helps to bring out a family dinner in a short amount of time, especially on weekdays. Really quick, fragrant and good value! My boys love it (children and husband alike). I hope you give it a try.
Creamy Coconut and Tomato Chicken
6 chicken breasts, cut in strips
2 medium size onions, chopped
1 can of quality coconut milk
1 can of chopped tomatoes
1 tsp sugar
1 tsp colombo powder (or other mild curry)
1 tbsp olive oil
Salt & pepper
Rice to serve
- Start by heating up the oil in a large pan. Add in the onions and cook for a couple of minutes without letting them colour.
- Toss in the chicken strips and the colombo spices. Season with salt and pepper.
- Add the chopped tomatoes then coconut milk. Add the sugar.
- Cover and simmer on a medium heat until the chicken is cooked through and the sauce is starting to get creamy. Serve with steamed basmati.
